There’s something so grounding about having one thing already sorted for the week.
For me, this granola has become that thing.
A full mason jar on the counter that I can reach for without thinking, it’s simple, ready, and nourishing to begin the day. It takes the pressure off the morning, especially in that early rush when little ones already need you before you’ve quite started yourself.
It’s just… there.
And I love knowing exactly what’s going into it. Simple, healthy ingredients I’ve chosen myself.
It’s also the kind of recipe that’s easy to bring the kids into—measuring, mixing, getting hands in the bowl. Sometimes I’ll even prep everything the night before, so in the morning we only need to mix and bake

🥣 Homemade Granola
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients
- 4 cups rolled oats
- 1 ½ cups nuts (I like pecans, almonds, and hazelnuts)
- ½ cup seed mix (pumpkin, sunflower, hemp, golden linseeds)
- ½ cup honey
- A good drizzle of maple syrup
- ½ cup coconut oil (melted)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
Optional mix-ins (add after baking)
- Coconut flakes
- Dark chocolate chips
- Sultanas, goji berries, raisins, or other favourites like cranberries or apricots
Instructions
- Preheat oven to 180°C (356°F) and line a tray with baking paper.
- In a large bowl, mix oats, nuts, seeds, cinnamon, and salt.
- In a separate bowl, combine melted coconut oil, vanilla, and maple syrup.
- Pour over dry ingredients and mix well (hands work best).
- Spread onto tray and gently press down.
- Bake for 10 minutes.
- Remove, stir, press down again, and drizzle honey over sections.
(More honey in one place = bigger clusters.) - Return to oven for another 7–10 minutes, until golden.
- Let cool completely, then add any optional mix-ins.
- Store in an airtight jar and enjoy throughout the week.
💡 A Few Notes
- If you want those big clusters, try not to stir it too much once it’s out of the oven.
- Letting it cool fully is what gives it that crunch.
- You can adjust sweetness depending on your taste—this recipe is very forgiving.
For the Week Ahead
It’s such a small thing, but having this ready changes the feel of our mornings.
One less decision to make, one less thing to rush through, just something good, already prepared. It’s also one of those recipes that never gets boring because you can pair it with so many different things and and adapt it however you like.
